Abstract

Effects of the espalier-training (Cordon) patterns (I, Y, or U) of virus-free vines (V. vinifera L. cv. Chardonnay) on must composition and wine quality were investigated on the basis of a 3-m permanent branch length and 12 kg of fruit per vine at the university vineyard from 1993 to 1995. The refractometric degree (Brix) of the grape juices from vines with Y and U patterns were slightly higher than that from I: for example, in 1995, 18.8 for Y, 19.4 for U, and 16.3 for I. The titratable acidities (g/100 ml) of the grape juices from vines with Y and U patterns were slightly lower than that from I: 0.59 for Y, 0.63 for U, and 0.70 for I in 1995. Grape juices from Y and U patterns resulted in better quality wines. These results and viticultural characteristics suggest that Y and U patterns may be recommended for an espalier-training system in Japan.
