Development and Pilot Testing of a Healthy Eating Video-Supported Program for Adults with Developmental Disabilities

Abstract

Video technology is a potentially effective means to teach individuals with developmental disabilities (DD) about healthy eating. Research in this area, however, is relatively unexplored. This study developed and tested a video intervention to teach healthy eating to adults with DD. A 5-segment educational video, an accompanying workbook, and a facilitator guide were developed to teach basic healthy eating concepts to adults with DD. Twelve adults with DD took part in a 5-week educational program led by trained facilitators using the materials created. Pre- and posttests were used to measure knowledge gained from participating in the intervention. Seventy-five percent (n = 9) of participants improved their knowledge scores, 8% (n = 1) maintained residue knowledge, and 17% (n = 2) had a decrease in their score. Video instructions can be an effective intervention modality to increase knowledge in adults with DD about healthy eating. Key enablers identified for participants’ knowledge gain included video content developed based on the learning need and cognitive level of intended users; program delivered by facilitators trained in effective teaching strategies; and engaging the participants’ staff, family, and caregivers to provide ongoing reinforcement about healthy eating.

Résumé

La technologie vidéo est un moyen potentiellement efficace d'enseigner aux personnes atteintes de déficiences développementales (DD) de saines habitudes alimentaires. Or, il s'agit d'une avenue de recherche relativement inexplorée. Cette étude a permis de mettre au point et de tester une intervention par vidéo visant à enseigner de saines habitudes alimentaires à des adultes aux prises avec des DD. Une vidéo éducative à 5 segments, un cahier d'accompagnement et un guide du facilitateur ont été conçus pour enseigner les concepts de base d'une saine alimentation aux adultes atteints de DD. Douze adultes aux prises avec des DD ont pris part à un programme de formation de cinq semaines dirigé par des facilitateurs formés utilisant le matériel créé. Des prétests et des post-tests ont été employés pour mesurer les connaissances acquises grâce à la participation à l'intervention. Soixante-quinze pour cent (n = 9) des participants ont amélioré leur score relatif aux connaissances, 8 % (n = 1) ont maintenu leur niveau de connaissances et 17 % (n = 2) ont connu une diminution de leur score. Les instructions par vidéo peuvent constituer une modalité d'intervention efficace pour accroître les connaissances des adultes aux prises avec des DD en matière de saine alimentation. Les catalyseurs clés identifiés en lien avec l'acquisition de connaissances par les participants comprenaient du contenu vidéo conçu en fonction des besoins en apprentissage et du niveau cognitif des utilisateurs prévus; un programme présenté par des facilitateurs formés pour mettre en œuvre des stratégies d'enseignement efficaces; et la mobilisation du personnel soignant, de la famille et des fournisseurs de soins des participants afin de fournir du renforcement continu par rapport à la saine alimentation.
