By this treatment, the axis ratio of protein was changed some degree. For this purpose organic acid is preferable to inorganic acid in general, and lactic acid favoured better than acetic and hydrochloric acids. Meal treated with phosphoric acid appears less suitable for the source of preparing fiber. The protein obtained through this process shows an inferior dispersion to that of non-treated, protein.
