Abstract:
Sweet potato (Ipomoea batatas L.) is an important multipurpose crop in Kenya.
However, its development has been hindered by certain problems associated with its production and storage.
An investigation to improve the shelf life of the tubers revealed that moldiness, caused by Botrytis cinerea and Penicillium sp. and rots, caused by Rhizopus stolonifer, Fusarium oxysporum, Mucor sp, and Aspergillus spp., are the most important storage problems of sweet potato tubers in Kenya.
