THE DEVELOPMENT OF STRUCTURED MANGO PRODUCTS

Abstract:
The manufacture of structured mango products from mechanically extracted mango puree is considered one way of increasing processing outlets for mangoes. The alginate structured mango products being developed include; (1) a high quality structured mango cheek that closely resembles the natural fruit, (2) structured mango pieces which are incorporated into other foods and, (3) structured intermediate moisture mango that can be used as a substitute for dried mango. Structured mango products have advantages over their conventionally processed mango counterparts due to their structural integrity. Research is still required to develop a structured mango texture that is more representative of the fresh fruit.
