Food loss is a significant challenge in the milk supply chain, impacting both Japan and Mongolia. Accurate quantification of food loss remains difficult, leading to limited understanding of causes and solutions. This study presents case studies of the milk supply chain in Japan and Mongolia, aiming to enhance the quantification method of food loss. It employs a case study methodology, combining primary data collected through interviews with key personnel in the dairy industry and secondary data from official reports. The study proposes Information and Communication Technology (ICT)-based solutions, including the use of IoT devices and blockchain technology, to address the challenges. The case study in Mongolia highlights issues such as inefficient transportation, poor infrastructure, and reliance on imports, while in Japan, there are challenges related to demand-supply imbalances and limited data on milk loss. The proposed ICT solutions offer potential to improve efficiency, minimize waste, and ensure product quality. Collaborative efforts and data collection improvement are crucial in mitigating milk loss. These findings contribute to a more sustainable and resilient milk supply chain, not only in Japan and Mongolia but also in other regions facing similar challenges.
