Abstract

In this study, we demonstrated the separation of lactic acid bacteria (LAB) in higher concentration yogurt sample (10 vol%) through a deterministic lateral displacement (DLD) micropillar arrays (pillars diameter:11.5 μm; the gap between the pillars: 3.5 μm) after vortexing. Before infusing the yogurt sample into the DLD arrays, the casein micelle aggregates were removed from the yogurt sample using vortexing. Then the prepared yogurt sample was infused into the DLD arrays with sheath fluid stream of pure water. The fluorescently stained LAB separated from yogurt sample were counted to evaluate the collection efficiency.
