Abstract

Phenolic acids are a group of compounds widely distributed in the world of plants. They are characterized by diversified chemical structure and pharmacological properties. Due to their health potency, associated mainly with antioxidative action, they are currently of interest as bioactive food components and supplements. This work provides an overview about the reported isolation procedures of phenolic acids from plant material and food products. The chromatographic and spectroscopic identification methods of these compounds are discussed.
