본 연구는 백포도주의 첨가량(0, 3.75, 7.24, 10.48, 13.50%)을 달리하여 제조한 무 피클을 0, 1, 2, 3, 4주까지 저장하면서 품질특성을 살펴보았다. 피클과 조미액의 당도는 백포도주의 첨가량이 증가함에 따라 유의적(p<0.001)으로 감소하였으며, 저장기간이 경과함에 따라 역시 감소하였다. 피클과 조미액의 염도는 백포도주의 첨가량이 증가하고, 저장기간이 길어짐에 따라 유의적(p< 0.001)으로 감소하였다. 피클과 조미액의 pH는 백포도주 첨가량에 따라 유의적(p<0.001)으로 높게 나타났으며, 0~4주의 저장기간에 따라서는 유의적(p<0.001)으로 감소하였다. 조미액의 L값은 백포도주의 첨가량이 증가함에 따라 유의적(p< 0.001)으로 증가하였으며, a값과 b값은 감소하는 경향을 나타내었고, 무피클의 L값은 백포도주의 첨가량이 증가함에 따라 유의적(p<0.001)으로 감소하였으며, a값과 b값은 증가하는 경향을 나타내었다. 무 피클의 경도는 백포도주의 첨가량이 증가할수록 제조 1주후까지는 유의적(p<0.001)으로 증가하는 경향을 나타내었다. 하지만, 저장기간이 경과함에 따라서는 유의적(p<0.001)으로 감소하였다. 관능검사 결과 외관, 맛, 전반적인 기호도에서 백포도주 10.48%를 첨가한 무 피클이 가장 높게 나타났다. 백포도주를 첨가한 피클의 품질특성을 살펴본 결과, 백포도주를 첨가하지 않은 대조군에 비해 아삭함이 오랜 기간 동안 유지되고, 비교적 높은 기호도 및 관능검사의 결과를 나타내어 백포도주를 첨가하는 것이 피클의 저장기간에 따른 품질특성을 높이는데 도움이 될 것이라 판단된다.
This study was conducted to examine the quality characteristics of radish pickle added with different amounts of white wine (0, 3.75, 7.24, 10.48, and 13.50%), stored for 0, 1, 2, 3, and 4 weeks. The sugar content of the pickle solution decreased significantly(p<0.001) as the concentration of white wine increased, and decreased significantly(p<0.001) as the period of storage lengthened. The pH value of the pickle solution increased significantly(p<0.001) as the concentration levels of white wine rose. The L-value of the solution increased significantly(p<0.001) with increasing concentrations of white wine, while the a-value and b-value both decreased. In addition, the L-value of radish pickle decreased significantly(p<0.001) as white wine concentrations increased, while the a-value and b-value increased. The hardness of the radish pickle increased significantly(p<0.001) when white wine concentrations were increased after 1 week. Hardness decreased significantly(p<0.001) during the period of storage. According to the results of sensory tests, appearance, taste, and overall preference were higher in the 30% additional sample[I can't find what this refers to]. These results are expected to be useful in producing radish pickle of optimal quality and to contribute to the development of various foods and the advancement of the food industry.
