Editorial

Dear Readers,

This supplement is dedicated to the XXIII Brazilian Congress of Food Science and Technology (XXIII CBCTA - 45 years) held from 01 to 04 May 2012 in Campinas, São Paulo, Brazil, to celebrate the 45th anniversary of the Brazilian Society of Food Science and Technology (sbCTA). The Society was founded on April 8, 1967 and is the pioneer entity in the sector. As a guiding beacon, it has focused the main stages of the development and progress of Science and Food Technology on governmental and academic areas, as well as establishing the first food processing industries in the country. The city of Campinas was the birthplace of such activities, once it hosts sbCTA, the Institute of Food Technology (ITAL) and the Faculty of Food Engineering (FEA) at University of Campinas (UNICAMP) until today. These three institutions founded by Professor Dr. André Tosello, an agronomist engineer far ahead of his time, have driven the food sector in Brazil, aligning it with international trends.

The 25 articles published in this supplement have been selected by the Scientific Committee among 746 papers presented at the XXIII CBCTA - 45 years, divided into the areas of Food Technology (299), Chemistry and Food Analysis (232), Food Microbiology (69), Food Engineering (51), Nutrition (49) Food and Biotechnology (46).

We thank the members of the Scientific Committee, reviewers and authors for the work done with care and quality. Our special thanks to Dr. Jane Menegaldo Gonçalves, who always believed in the success of CBCTA XXIII - 45 years and the completion of this supplement.
