We examined the products from the reaction of Nα-acetyltryptophan (Ac-Trp) and hexanal, which is a major secondary product of lipid peroxidation, in the presence of cations such as Nα-acetyllysine. Nα-Acetyl-1-(1-hydroxyhexyl)tryptophan (Trp-HL-4) was identified as a major product in addition to cross-linking products of Ac-Trp which we had reported in a previous paper [Kaneko et al., Agric. Biol. Chem., 53, 2679 (1989)]. Trp-HL-4 was assumed to be an intermediate through a cross-link formation. The course of browning of Ac-Trp derivatives was also examined and their role in browning and fluorescence production in proteins was discussed.
