Aspergillus oryzae-proteolipid (PL), showing both actions of the promotion of yeast growth and the enhancement in alcohol-durability of yeast cells, leading to the accumulation of a high concentration, more than 20%, of alcohol, consisted of 58.5% phospholipid, 26.7% protein and 5.4% ash. Phospholipid consisted of 78.3% phosphatidylcholine, 18.5% a sphingolipid and 3.2% lysophosphatidylcholine. Fatty acids were composed of 77.5% unsaturated fatty acids major in linoleic acid. The protein moiety was abundant in aliphatic and acidic amino acids. A role of the insoluble PL in the statical culture of yeasts was suggested that the unsaturated fatty acid-containing phosphatidylcholine was supplied to the anaerobically grown yeast cells, to promote the yeast growth and to enhance their activities.
