ABSTRACT

This chapter describes the One Health framework to understanding and improving the interconnections between the health of humans, animals, and the environment, and the resulting impact on food safety and food security. One Health uses a different approach to reducing disease and poor health through its focus on systems and upstream factors, monitoring and preventing the introduction and spread of disease and contaminants in the environment and animals, which thereby prevent or reduce the transfer of disease to humans, and improve the sustainability of the food supply. The chapter presents the rationale for adopting a One Health approach, including reduction of foodborne illness, provides specific examples of the conditions for, and barriers to, the success of adopting the approach, and presents examples of successful implementation of One Health.
