ABSTRACT

The global food trade calls for putting in place safety regulations and guidelines, given the increasing food scares associated with food chains. The history of the food trade documents various hazards appearing on the surface as food recalls and foodborne illnesses, with economic depreciation arising as a fallout. These guidelines, therefore, pertain to ensuring food safety from a physical, chemical, and biological perspective. The implementation of food safety regulations is focused on preventing the occurrence of any potential hazard rather than adopting a curative approach. Various international organizations and regulatory bodies have been formed as a response to the need to mitigate the food safety crisis. This chapter highlights the evolution of food safety regulations across the globe and also provides an account of the framework of various food safety regulations.
