(2020) found that the addition of glutathione (GSH) to apple juice after pulsed light treatment resulted in an 89.50 % reduction in the PAT content of the apple juice. The addition of ozone to apple juice reduces the initial concentration of PAT to near zero, and at high ozone concentrations or sufficient ozone oxidation time, PAT is fully degradable to CO2, diethanolic acid, oxalic acid and other chemicals (McKenzie et al., 1997; Cataldo, 2008). Physical and chemical methods can be effective in removing PAT, but there are still many problems.

Ozone treatment of fumonisin B1 can transform it into another unsafe compound(McKenzie et al., 1997). Therefore, our research cytotoxic changes of DON in the process of ozone treatment were tracked at the cellular level, and changes in the molecular structure of DON and the characteristics of its products at different time points were detected by Q Exactive Focus high-resolution liquid chromatography-mass spectrometry.
