2022, Food Research InternationalCitation Excerpt :The bands around 2880 cm−1 and 2850 cm−1 are related to the antisymmetric and stretching vibrational bands of CH2 in the CH stretching region, which are sensitive to changes in alkyl chain conformation and interchain lateral order. Therefore, the intensity ratio I2880/I2850 is often used to reflect the degree of lateral packing order and chain “flow” of lipid molecules in liposomes (Gaber & Peticolas, 1977). An increase in I2880/I2850 indicates an enhanced lateral order of molecular arrangement, which leads to the reduced fluidity of the membrane (Pu, Tang, Li, Li, & Sun, 2019).
