Abstract
Cauliflower has relatively short life after harvest and packaging assists to preserve it from drying and maintain texture, color and nutritional benefits. The aim of present study is to find the most suitable formulation for biocomposite films of kefiran (0, 1 and 2%), Malva neglecta mucilage (0, 1.5 and 3%) and rice bran oil (0, 0.04 and 0.08%) to expand cauliflower on 7th, 14th, 21st and 28th days of shelf life at 4 °C. The thickness, solubility and water vapor permeability were performed on produced film samples. Therefore, optimization of process conditions for films production was detected based on 0.98% kefiran, 2.09% M. neglecta mucilage and 0.08% rice bran oil. Afterward, weight loss, respiration rates, ascorbic acid, total phenolic, microbial activity and sensory evaluation were measured on treated and control cauliflowers during shelf life. Applied treatment was highly effective in reducing weight loss (1.14–2.24%) and maintaining higher phenolic contents (163.04–120.22 mg per 100 g sample) and ascorbic acid (74.04–43.34 mg per 100 g sample) compared to control during shelf life. Treatment generated significant changes on O2 consumption (2.03–1.75 mL L−1 h−1) and CO2 production (2.23–1.82 mL L−1 h−1), on the other hand noticeable effect exhibited reducing growth of Listeria innocua from 1.40 log CFU g−1 to ND during 28 days. The conclusions demonstrated that bioactive film had potential to develop visual perception, with no influence on interior quality and nutritive status of cauliflower during shelf life.
