Determination of Chemical, Physical, and Functional Properties of ‘Karaerik’ Grape (Vitis vinifera L. cv. ‘Karaerik’)

Abstract

This study aimed to investigate the effects of altitude and ripening stage on the total fat content and fatty acid composition, antioxidant properties, and phenolic profiles of the seed, skin, and pulp of the ‘Karaerik’ grape. Amounts of gallic acid, catechin and total monomeric anthocyanin contents, as well as metal chelation properties and antioxidant activity (FRAP and DPPH) of ‘Karaerik’ grape samples were found to be statistically significant (p < 0.01). On the other hand, total fat, altitude, ripening groups, and years were found to be statistically insignificant (p > 0.05). While altitude and ripening did not show an effect on total fat, a significant effect was found for the core part. Palmitic and stearic acid from saturated fatty acids and linoleic acid from unsaturated fatty acids were determined as major fatty acids. K, Mg, Ca, P, Zn, Cu, and Fe were found to be the main minerals in seeds.
