Zusammenfassung
Westliche Ernährungsstile, die häufig einen hohen Anteil tierischer und industriell verarbeiteter Lebensmittel enthalten und gleichzeitig arm an vollwertigen, pflanzlichen Nahrungsmitteln sind, haben ausgeprägte negative Auswirkungen auf die menschliche Gesundheit. Dies ist unter anderem sichtbar an hohen Raten von Adipositas, kardiovaskulären und metabolischen Erkrankungen sowie einigen Krebserkrankungen. Gleichzeitig befeuern diese Ernährungsstile in maßgeblicher Weise die drängendsten Umweltprobleme unserer Zeit, von der Klimakrise bis hin zum Artensterben, und bedrohen damit die planetare Gesundheit. In einer Transformation zu stärker pflanzenbasierten Ernährungsweisen, beispielsweise im Sinne der „Planetary Health Diet“, liegt daher eine große Chance für Mensch und Umwelt. Auf Ebene der individuellen Gesundheit lässt sich über eine erhöhte Aufnahme antiinflammatorischer und eine reduzierte Aufnahme proinflammatorischer Nahrungsmittelbestandteile durch pflanzliche Verzehrmuster beispielsweise eine Verbesserung der Schmerzsymptomatik erreichen, insbesondere bei entzündlichen und degenerativen Gelenkerkrankungen. Eine nachhaltige Veränderung der global dominanten Ernährungsweisen ist zudem eine wesentliche Grundvoraussetzung für die Einhaltung globaler Umweltziele und damit den Erhalt einer lebenswerten und gesunden Zukunft für alle Menschen. Mediziner*innen kommt daher eine besondere Verantwortung zu, diese Veränderung entscheidend voranzutreiben.
Abstract
The consumption of western diets that are often rich in animal-source foods and low in wholesome, plant-based foods, has grave implications for public health. This is expressed in a growing prevalence of obesity as well as high rates of cardiovascular and metabolic diseases and some cancers. At the same time, current global dietary patterns are major contributors to global environmental challenges, i.e. the climate and the biodiversity crisis, and are thereby a major threat to planetary health. Shifting to more plant-based diets, e.g. in line with the “Planetary Health Diet”, provides a major opportunity to improve individual and planetary health. Plant-based dietary patterns with an increase in the consumption of anti-inflammatory and a decrease in pro-inflammatory substances can also lead to improvements in pain symptoms, especially in inflammatory or degenerative joint diseases. In addition, dietary shifts are a prerequisite to achieve global environmental targets and thereby ensure a livable and healthy future for everyone. Medical professionals therefore have a special responsibility to actively promote this transformation.
