Abstract
Exopolymer gum of xanthan type was produced from whey by a mutant strian ofXanthomonas campestris lac + In 75-L and 300-L fermentatin tanks the cultivation and production conditions were studied. After optimization a maximum yield of 20 g/L polymer production in a nutritive medium was reached.
