Summary
In 1986 and 1987 previously undetected yellow spots were found in the flesh of the potato variety “Hertha”. In order to find out whether these uncommon colour spots were caused by natural substances or contaminants, we investigated the discoloration of the potato by thin-layer and paper chromatography as well as by spectral analysis. Two main components were identified as flavonoids, namely rutin and quercetin-3-(2G-glucosylrutinoside). Therefore, this potato variety can be consumed despite the presence of these yellow spots.
Zusammenfassung
Im Erntejahr 1986 und 1987 sind in der Kartoffelsorte „Hertha” bisher noch nicht aufgetretene gelbe Flecken festgestellt worden. Zur Klärung, ob diese Gelbfärbung durch kartoffeleigene oder durch die landwirtschaftliche Technik zugeführte Fremdstoffe bedingt ist, wurden die Dünnschicht- und Papierchromatographie sowie die Spektralanalyse herangezogen. Die Untersuchungen ergaben, daß die vom Kartoffelfleisch abweichende Farbe auf natürlich vorkommenden Flavonoiden beruht, deren zwei Hauptkomponenten als Rutin und Quercetin-3-(2G-glucosylrutinosid) identifiziert werden konnten. Die Kartoffelsorte „Hertha” ist daher unbedenklich genießbar.
