Abstract

Jerusalem artichoke (Helianthus tuberosus L.) is a promising species for the development of bioeconomy. It is distinguished by many advantages, such as: high productivity, easy adaptation to various climatic and soil conditions, resistance to diseases and pests, resistance to drought. The current state of knowledge about its biology, physiology, breeding, chemical composition, nutritional and therapeutic properties, economic importance, and processing technology of this species was reviewed. The valuable bioproducts obtained from plants of H. tuberosus are also discussed. This plants, thanks to their favourable chemical composition of tubers and aerial parts, as well as their quality, increases the interest of consumers. This species is able to replace the scarce raw materials partially or completely, which in turn allows for the expansion of the range of manufactured products, including the sought-after functional food. The possibilities of using Jerusalem artichoke as a raw material for the production of medicines, phytocosmetics, natural fungicides and also as a source of bioactive ingredients: inulin, fructose, vitamins, antioxidants, and minerals were presented.
