Abstract

The Indian Himalayas are hub for more than 8000 species of vascular plants. Among these, only 1748 are known to man for their medicinal and nutritional properties. The diversity of crop plants is seen majorly on the southern regions of the Himalayas, which is influenced by climatic variations created by altitudinal gradients. The decline in crop diversity is grossly accelerated by different factors like abiotic and biotic stresses and thus many species of crops are going endangered. Among majority of these crops, researchers and policymakers initiate least conservation strategies to neglected and underutilized species (NUS). NUS crop species are essential in economically sustainable farming, human nutrition, and food security to local farmers. There are many neglected and underutilized species of spices in Himalayan region, rich in vitamins, aromatic compounds, antiseptics and other nutritional as well as medicinal compounds. There is enough scope for the production of value added products from the neglected spices. This chapter highlights importance of these crops in nutrition and plant-based medicinal applications to human health and food security. In addition, the status of cultivation and utilization of NUS is discussed to create public awareness to instigate their timely conservation strategies.
