Abstract

In comparison with the worldwide production of all cereals, in particular with that of wheat, rye is only of minor importance. And yet, rye is indispensable in farming and eating habits in some regions, particularly in Northern Europe and in the former Soviet Union countries. In 1994 about 22 588 000 Mt rye were produced on 11 012 000 ha. This production represents 1.2% of world cereal production and about 4% of the world wheat production, yet the world trade volume (imports and exports) of rye is estimated close to 430 million US$ (Anon., 1995). In spite of this somewhat limited amount of finance, trade with rye must not be neglected and calls for quality requirements and regulations in trade and handling as wheat does.
