Zusammenfassung
Stärke und Zucker sind Grundelemente des pflanzlichen Stoffwechsels und werden fast von allen Phanerogamen als Reservematerial in Samen und Rhizomen gespeichert. In diesem Zustand sind sie Tier und Mensch bequem zugänglich und liefern dem Stoffwechsel der Warmblüter in leichtverdaulicher Form die notwendige Energie (Abb. I. 1).
