Lipoxygenases from Plant and Animal Origin

Abstract

Lipoxygenases (linoleate:oxygen oxidoreductase EC 1.13.11.12) catalyze the dioxygenation of polyunsaturated fatty acids which posses a 1,4-cis,cis-pentadiene system. Under optimum conditions regarding pH, temperature, and concentration of the reactants, the products are optically active cis, trans conjugated hydroperoxides. For example, the products of the enzymic dioxygenation of linoleic acid are 13-S(L)-hydroperoxy-9-cis,11-trans- (13-S-HPOD), 9-R(L)-hydroperoxy-10-trans,12-cis- (9-R-HPOD) or 9-S(D)-hydroperoxy-10-trans,12-cis-octadecadienoic acid (9-S-HPOD) (Scheme 1).
