Abstract
Food insecurity, or not having access to enough food to live an active healthy lifestyle, affects over 30% of low-income households with young children. With the onslaught of the COVID-19 pandemic, there are estimates that there will be between 12 million and 18 million children experiencing food insecurity by the end of 2020. This brief will synthesize current knowledge about food insecurity’s effects on children, families, and households and will emphasize multiple pathways and variations across developmental contexts. This volume also focuses on emerging new methods that allow a more refined approach to inform practice and policy. This introduction provides a brief overview of the major research themes in food insecurity in households with children and how this volume addresses significant gaps in the literature. The chapters are briefly summarized, and the chapter concludes with recommendations for policy and practice based on the research provided in the volume.
