Abstract
This chapter gives an overview of the milestones in celiac disease research and presents the epidemiology of celiac disease. Celiac disease is one of the best-understood immunological diseases. It affects roughly 1% of most populations worldwide. The disease is triggered by nutritional gluten, is genetically determined by the genes HLA-DQ2/DQ8 and is amplified by the autoantigen tissue transglutaminase. The various symptoms of celiac disease, its diagnosis and treatment are presented, newer drug and immunological therapy approaches are critically discussed. Five thoroughly commented clinical cases from our own practice round off the chapter.
