Abstract

There has been much discussion in this meeting regarding the involvement of hydroxyl radicals (OH), oxidizing lipids, and metal ions in oxidative damage in living tissue and in food systems. However, the causal relationships linking these three species to each other and to specific damage in cells have not yet been clarified. Indeed, the literature is replete with contradictory claims regarding their activity and effects.
