Abstract
MPR foods are foods with added value and convenience. They may have been peeled, sliced, diced, or chopped; they may be blanched, pasteurized, or partially cooked. They are stored and marketed under refrigeration in combination with other treatments such as modified atmosphere or vacuum packaging for shelf-life extension. In addition to many traditional foods, such as milk and orange juice which are minimally processed and refrigerated, other examples of MPR foods include cooked pasta and vegetable salads; uncooked pasta; packaged sandwiches; chopped or shredded lettuce or cabbage; various forms of prepeeled fresh potatoes; baked goods; fresh fish, meat, or poultry; and partially prepared or cooked entrees or complete meals.
