Abstract
Even if he does not stay long enough to need a bed, every tourist needs to eat and the restaurant industry is a vitally important part of tourism — whether in the form of restaurants, fast food, takeaway, pubs, clubs — or even the provision of ready-prepared meals by supermarkets. What would the long-stay summer visitor to London do without Marks & Spencer — a tourist attraction in its own right?
