Sažetak
U živinarstvu uspeh je u detaljima. Za dobrobit mladih tovnih pilića bitno je da se obezbedi temperatura, kvalitet vazduha i jednostavan pristup vodi i hrani za celo jato. Optimalni uslovi za jato se razlikuju u zavisnosti od hibrida i starosti. Sadržaj proteina u mesu brojlera je 21,5-22,5%, a sadržaj masti 6-8%. Sadržaj mišićnog tkiva u trupu varira između 40 i 70%. Širokoprsni brzorastući tovni pilići imaju 94-98% mišićnog tkiva u grudnoj muskulaturi. Osim toga, pileće meso je bogato mikroelementima i vitaminima i, kao takvo, vrlo poželjno za ljudsku ishranu, kako u trupovima tako i u proizvodima. Poslednjih godina sve se veći broj trupova, ili delova trupa, na liniji klanja proglašava uslovno upotrebljivim, ili neupotrebljivim, zbog tehnopatija uzrokovanih unutrašnjim i spoljašnjim uticajima tokom proizvodnje. U radu su opisani potrebni uslovi za smeštaj i uzgoj brojlera i neka stanja koja uzrokuju promene na pilićima zbog kojih se na liniji klanja odbacuju celi trupovi ili delovi trupa. Gubici koji nastaju usled neupotrebljivosti trupa su, u nekim jatima, i do 20%.
