Abstract
The effect of two different sources of magnesium fertilization, Epsom salt (MgSO4·7H2O) or dolomite (MgCO3·CaCO3), on enzymatic discoloration, phenolic, crude lipid, phospholipid and Mg content, of Katahdin potatoes was studied over a 3 yr. period. Tubers grown in soils receiving either Epsom salt, or dolomite, were compared with control tubers receiving no added magnesium. Tubers from plants receiving Epsom salt discolored the least, were lowest in phenols and highest in crude lipid, phospholipid and Mg contents. However, when dolomite was the source of Mg the tubers discolored more, were higher in phenols, and were lower in Mg content than control tubers. The source of Mg fertilizer was very important in determining the quality of tubers.
Resumen
Se estudió, durante un periodo de 3 años, el efecto de dos diferentes fuentes de fertilización con magnesio, la sal de Epson (MgSO4·7H2O) o la dolomita (MgCO3·CaCO3), sobre la decoloración enzimática y el contenido en fenoles, lípidos crudos, fosfolípidos, y magnesio, de papas de la variedad Katahdin. Los tubérculos desarrollados en suelos que recibieron ya sea sal de Epson, o dolomita, fueron comparados con tubérculos testigos que no habían recibido adición de magnesio. Los tubérculos provenientes de plantas que recibieron sal Epsom fueron los que se discoloraron menos, presentaron el contenido más bajo en fenoles y los más altos contenidos de lípidos crudos, fosfolípidos, y magnesio. Sin embarge, cuando la fuente de magnesio fue la dolomita, los tubérculos se decoloraron más, tuvieron un contenido más alto en fenoles, y menos magnesio que los tubérculos testigos. La fuente de fertilizante magnésico fue muy importante en la determinación de la calidad de los tubérculos de papa.
