Résumé

Du jus de canne à sucre, les auteurs ont extrait un enzyme, le sucrose phosphorylase, qui diffère des enzymes tirés jusqu'ici dePseudomonas saccharophilia par certaines propriétés caractéristiques. La présente note étudie ces propriétés et donne la détermination de leurs constantes physiques.
