Summary
The influence of temperature on the fermentation of Streptococcus lactis in a liquid medium containing 2,8 mmol/l toluylene blue has been investigated. The formation of lactic acid showed optima at 28°, 34°, and 38°C. Below 30°C the optimum for the production of volatile acids corresponded to the optimum of lactic acid production. Above 30°C three optima for the formation of volatile acids could be detected. These optima were located at the temperature of reduced lactic acid production (32°, 36°, 40°C). This has been interpreted as an effect of competition between the fermentations of lactic acid and volatile acids.
Beyond 30°C lactic acid fermentation was inhibited by toluylene blue only at temperatures other than the optimum temperatures of 34°C and 38°C. The formation of volatile acids was inhibited by the dye only at a distance from the mean optimum temperature at 36°C. Between 34° and 38°C no inhibition of volatile acid production by the dye, at the concentration used, could be obtained.
Zusammenfassung
Es ist der Einfluß der Temperatur auf die Gärung von Streptococcus lactis bei Zusatz von 2,8 mmol Toluylenblau untersucht worden. Die Bildung von Gärungsmilchsäure zeigte Optima bei 28°C, 34°C und 38°C. Unterhalb von 30°C stimmte das Optimum für die Bildung von flüchtigen Säuren (als Essigsäure berechnet) mit dem Optimum für die Milchsäurebildung überein. Oberhalb von 30°C konnten drei Optima für die Bildung von flüchtigen Säuren ermittelt werden, die bei den Temperaturen minderer Milchsäurebildung, d. h. bei 32°C, 36°C und 40°C lagen. Es wird dies als ein Konkurrenzeffekt zwischen der Milchsäurefermentation und der Fermentation von flüchtigen Säuren gedeutet.
Oberhalb von 30°C wurde die Milchsäurebildung nur außerhalb der Optimaltemperaturen durch Toluylenblau gehemmt. Die Bildung flüchtiger Säuren ließ sich durch den Farbstoff erst in weiterer Entfernung von dem mittleren Temperaturoptimum (36°C) hemmen. Zwischen 34°C und 38°C war keine Hemmung der Bildung flüchtiger Säuren durch die angewandte Farbstoffkonzentration möglich.
